Sapodilla Kitchen started on a two-burner stove in Maraval, cooking Sunday lunch for family and the few neighbours who'd catch the smell and knock.
Word travelled. Soon it was christenings, then weddings, then office limes, the same recipes, pelau browned the long way and callaloo swizzled by hand, just a much bigger pot. Everything is still made fresh the day of your event. Nothing sits.
